Description
This DOP cow's milk cheese is from Minorca in the Balearic Islands. Mahon has been made since Roman times and has a long tradition in the Spanish history. The milk is thermalized, not pasteurized. Pale yellow in color with numerous eyes in the cheese, this four-month-aged cheese has a characteristic orange rind. Creamy with a nutty finish, Mahon is versatile in the kitchen. The pale-yellow color of the rind is not created by bacteria but by rubbing butter, paprika, and olive oil into the rind to enhance its appearance and prevent mold. Someone once asked how the cows came to be on Menorca and we were told by the producer that they swam there!
